I’ve always cooked from instinct—blending the flavors I grew up with and local ingredients are on hand. Since many of my dinner guests include both vegetarians and non-vegetarians, I like to create menus with a shared base—making meal planning easier and ensuring everyone at the table feels satisfied.  For those with a spicy palate who also crave a health-conscious menu (like me), navigating trendy diet themes like Vegan, Whole30, Keto, and Paleo can be a real challenge. While my recipes may not be fully compliant, they are inspired by these diet themes with the intention of supporting a healthy lifestyle.  Raised in India with Konkan coastal roots, and now living in Northern California, I’ve naturally begun adapting those familiar dishes to the fresh, seasonal bounty around me.
